Looks delicious, no? Baby spinach, seared chicken breast, slivers of red onion, hard-boiled egg, bleu cheese dressing, and a smattering of walnuts.
It tasted okay..but it was missing something. Something I forgot until I returned to the kitchen with my empty plate and saw the slice of crispy (lower-sodium) bacon I cooked 30 minutes earlier, AKA the entire reason for the salad in the first place!!!!!!!!
Humidity makes me loopy.

Looked great tasting anyway. Question: did you go ahead and eat the lone slice of bacon...I would have.
Oh yes--I should have mentioned that I ate the bacon all by itself! Waste not, want not!
